Today we're going to be talking about how the versatile line of Stoelting equipment can help you add a shake program to your existing menu. Now, today we'll be going over the F231 Stoelting soft serve machine. It's a gravity-fed, two-barrel with a twist machine, which will do soft serve and a frozen yogurt product. And we're also going to be working with the stoelting mix-in blender.
Both are very versatile machines, and we're going to talk specifically about some of the features and benefits and how you can use them to to grow or add a shake program to your business. The Twist feature allows you to serve two flavors individually or combine flavors for a unique twist. The self-closing spigot eliminates waste and ensures precise portion control. One of the features I really love about this F231 is the fact that it has IntelliTec2 controls. So this control communicates to the operator throgh the LCD screen, so it really gives you great control over what's happening with the machine.
It's a very compact design, particularly in locations where floor space is a premium. So you do get a lot of bang for your Bucks so far as capacity in a smaller footprint machine. Stoelting Ice Cream Machine: F231 Cleaning Instructions

Emptying Your F231 Soft Serve Machine:
Remove the Hopper cover and remove the mix Inlet regulator from the Hopper. On the IntelliTec2 control, press the off button and then the clean button. When the product in the barrel has melted after about five minutes, open the spigot to drain.
Once drained, press the clean button to stop the Agar. Fill the Hopper with two gallons of cool tap water and press the clean button. Let the machine run for at least 30 seconds and drain the machine. Then press the clean button to stop the augur. Prepare cleaning Solution By mixing 2oz of Starshine Green label or equivalent in two gallons of 90 to 100 degree water.
Fill the Hopper with the cleaning solution and press the clean button. Let the machine run for 30 seconds, then press the clean button and drain the machine. Turn the machine off by pressing the main freezer. Power off/on button.
Disassembling Your F231 Soft Serve Machine:
Remove the knobs on the front door and remove the front door.
Push the spigots to the bottom of the front door. Remove all orings from parts by first wiping off the lubrication, using a clean towl, then squeeze the Oring upward to form a loop. Roll the Oring out of the groove. Remove the front augur support and bushing.
Pull the augur out slowly. As the augur is being pulled out, carefully remove each of the plastic flights. Keep the rear of the augur tipped up. Once it is clear of the freezing cylinder to prevent the rear seal from dropping. Wipe the lubricant off the Hex end of the augur with a paper towel and remove the rear seal assembly. Unscrew the Springs from the augur flights.
Cleaning Your F231 Soft Serve Machine:
Follow local and state regulations for cleaning and sanitizing. Use brushes, sponges and wash cloths to thoroughly clean all parts. Mix Sanitizer according to manufacturers instructions. After cleaning and sanitizing the parts, washed the freezing cylinder with a detergent solution using the brushes provided.
Be sure to clean the rear seal surface with a detergent solution. In a clean bucket, prepare Starshine Sanitizer or equivalent according to the manufacturer's instructions to provide a 100 parts per million strength solution.
Sanitize the freezing cylinder using a large barrel brush.
Assembling Your F231 Soft Serve Machine:
Screw the Springs into the studs on the augur flights. Put the Oring onto the rear of the augur and apply a thin coat of petrol gel onto the Oring. Lubricate the inside metal surface of the rear seal with petrol gel and install it onto the augur. Put a thin coat of lubricant onto the Hex end of the augur shaft.
Place two flights into the rear of the augur and insert the augur part way into the freezing cylinder. Install the remaining plastic flights while pushing the augur into the freezing cylinder. Rotate the augur to engage the drive shaft. Put a thin layer of petrol gel to the inside and outside of the augur support, pushing place the bushing onto the augur support and install the support into the front of the augur. Rotate the augur support so that one leg of the support point straight up.
Put the o rings into the grooves on the spigot bodies and spread a thin layer of petrol gel onto the orings. Install the spigot bodies through the bottom of the front door. Install the large o rings into the groove on the front door. Place the front door onto the mounting studs and screw the knobs onto the studs. Tighten the knobs in a criss cross pattern.
DO NOT use any tools to tighen the knobs! Install the drip tray and drip tray grid.
Sanitizing Your F231 Soft Serve Machine:
Prepare Starshine Sanitizer or equivalent according to the manufacturer's instructions to provide a 100 parts per million strength solution. Install the mix Inlet regulator into the Hopper. Pour the sanitizing solution into the Hopper. Make sure the display shows that the freezing cylinder is off.
If it is not, press the on/off left or on/off right button to turn it on. Press the clean button. Check for leaks at the front door and rear seal. Using a sanitized soft bristle brush dipped in sanitizing solution and clean the Hopper sides, Mixed Inlet regulator, and underside of the Hopper cover.
After five minutes, open the spigot to completely drain the sanitizing solution. Press the clean button to stop the cleaning cycle.
Running Your F231 Soft Serve Machine:
Make sure the display shows that the freezing cylinder is off. If it is not, press the on/off left or on/off right button to turn it off.
Fill the Hopper with at least two and a half gallons of mix. Open the spigot and drain a small amount of mix to remove any remaining sanitizer. Close the spigot. Press the on/off button for the cylinder to be run. Press the freeze button. When the display shows 'serve product', it is ready to dispense.
